I love birthday celebrations with my family. Unfortunately though, (and i’m sure many people can relate) birthdays and holidays are really the only time my family and I sit down to eat a meal together these days. Now, granted, we are all married and moved out (except for my younger sister Emily...Lucky man whoever that will be ;)) and we all work and have busy schedules...But I sure wish we would get together around the table more often, because when we do it is always a blast! :)

It was my older sister Sarah’s birthday yesterday, and it’s a tradition in my family to have chicken Shish-Kabob with rice pilaf and Greek salad for everyone's birthday dinner. We usually start prepping it it the day before, and marinate the chicken and veggies overnight which makes for a very flavorful meal the next day!

We then follow the meal by opening gifts and taking pictures, (we take tons of pictures in my family ha ha) and then bring out the dessert and sing! For dessert I always make a special birthday ‘treat’ that is delicious, yet a ‘lighter’ version of a traditional birthday cake! This year for my sister’s birthday I made a frozen peanut butter pie! It ended up tasting a lot like a Reese’s peanut butter blizzard!

Everything was so delicious that I admit I may have ate a bit more than my body needed...But it goes with out saying, it was tasty! I will be sharing both the Shish-Kabob and the frozen peanut butter pie recipe this week...and who knows, maybe you’ll like it so much it will become your new family ‘birthday’ tradition! ;)
