Something I get asked often is, "What are good vegetarian options?" My son is a vegetarian of four years. So, by trial and error, I've found which products are tasty and which are, well, toss worthy. Today, I'm sharing my favorite vegetarian foods and recipes, all that are tasty, easy, and high in protein.
Beyond the Burger
My son really likes these! When I first discovered them, I gave one to my husband as well. He was sure I'd given him meat. I buy them at Target or Whole Foods.

Impossible Burger
The Impossible Burger is a hot new trend! You literally can't tell the difference between a beef patty and an Impossible patty. I don't buy these to serve at home, but they're a favorite treat for my son from a local restaurant that serves amazing gluten-free, vegetarian options. I say "treat" because these aren't the "cleanest" vegetarian option, so you wouldn't want to eat them everyday, but occasionally they're a tasty way to satisfy a burger craving.

Beyond Ground Meat
I use these to give a "meaty" texture to recipes where I'm using ground turkey, beef, or bison. I use it in tacos, pasta dishes, casseroles, basically anywhere you'd add ground meat, this works great!

Amy’s Frozen Meals
Amy's makes a great line of gluten-free and vegetarian ready-made meals. Again, not something you'd eat for every meal, but a great option for quick lunches. Amy's uses mostly very clean ingredients so these are a perfect vegetarian option to keep on hand for when you need them!

They are delicious, satisfying, and loaded with protein. Sometimes I serve it as a bowl topped with lettuce, tomato, and guacamole. Other times I use it as soft taco filling, or with a side of tortilla chips. It always gets gobbled up.
Another tasty way to get good protein is with bean or legume pasta. I use these in recipes that call for pasta, or just on their own with marinara sauce (or, my son like them plain with butter and garlic). Easy!
