So, we currently have a BLIZZARD warning here in Michigan...And it's pretty darn crazy to think that we may have 1-2 feet of snow when we wake up tomorrow!!! Luckily, us Michiganders have plenty of ice/snow removal systems in-tact, but it sure doesn't keep people from flocking to the grocery stores and/or gas stations in fear, (like the world is going to end or something!) :)
Well, i'm not too worried myself, i've got all the food in the world (haha) and the one's I love around me~ not to mention a kickboxing video (or two) if we really are stranded for a while! Although, let's hope not I have to work Thursday!!! :)
This daily dish comes at a perfect time because it's filled with of my favorite 'low cal' comfort foods (which we all need during a blizzard)...Lasagna!!! And a fun winter workout~ ice skating!
But first....I started the day out with what else!?! My Peanut Butter Protein Shake of course! With none other than PB Pows cereal on top for crunch!

I went out to lunch at a small place downtown, and had an amazing Chicken Greek Salad! (I added a bit of the bread as 'croutons' for 'texture' and ordered my dressing on the side!!!)

This restaurant has a self-serve frozen yogurt, so I had a little bit of Orange-Vanilla Twist Soft Serve & a diet cream soda~ Amazing!

I went home to get dinner started, and had a blast creating my low-carb noodle-less lasagna! I started by cutting my zucchini for the 'noodles'...and like everything else I cook/bake, I just made it up as I went along with what I had in the house! :)

I knew I wanted to pre-bake the zucchini to get some of the excess moisture out, so the lasagna wouldn't be watery... (Which it didn't at all, so i'm glad I decided to include this step!)

I then cooked my lean ground turkey meat with some spaghetti sauce.

And threw in some of my favorite frozen veggies, (about 1/2 of each bag)...which made for a hearty and filling 'meat' mixture!

For the 'cheese' filling, I didn't have ricotta, so I used cottage and parmesan cheese! I figured it would be a great blend of creamy and salty! :)

Then I put everything out to start layering!

I don't think it really matters what 'order' you layer things in, so I started with the meat...

Followed by the zucchini...

And then the cottage cheese layer.

And repeat.

I then baked it like you would most lasagna's...By covering it with foil for an hour, and removing the foil at the end to let the cheese brown! Yum!!!

I love winter for many reasons, but these 'warm and delicious' comfort foods, and fun outdoor 'winter' workouts are some of the top few! (Don't mind the blue rental skates haha!)

And as you can see...We had a blast!
