HAPPY MOTHERS DAY!!! Unfortunately, this is the first mother's day that I did not spend with my mom...She was on vacation in Cobo, Mexico... So after church, my sister and I went to Ruby Tuesday's to celebrate 'being mothers' of some pretty cute puppies! :) (we missed you mom!)
In honor of mother's day, I thought i'd share a picture of my beautiful mother with my sisters and I! I love you mom!

And here is mine and my sister's reason for celebrating mothers day! ;)

Now, on to the Daily Dish! For breakfast I tried to 'perfect' my re-make of a Starbucks Mocha Frapp. (with protein of course!) It didn't taste 'exactly' the same, (so I'm still working on the recipe), but it was still MIGHTY tasty!!!

And of course, I finished off my breakfast with my coffee with whip cream and stevia! :) (Don't mind the pic~ I forgot to have the hubby take one, and he was getting ready, so I used the good ol' mac cam!)

After an awesome church service, we went to Ruby's for the SALAD BAR!!! I love the salad bar, and honestly you can make a pretty great (and balanced) meal with all of the options. However, I think I'm going to do a post one day on the 'danger zones' in a salad bar, because you could really turn a good thing bad very quickly! Haha! This was my sisters plate, which had tons of veggies, beans, feta, and even grapes! (My sister's salad was much prettier than mine, but mine was similar...It was huge, I know, but it was our meal!)

After eating, we thought we'd stop by Twelve Oaks Mall, and just happened to make our way over to the pet store, to look at the little fur-balls, and look what we found!!! AHHH!!! (We almost walked out with her, then we came to our senses that we would have to clean the poop/pee on our condo's white carpets...aka, not fun!) She was TOO CUTE though!

For my snack I grabbed one of my favorite new combo's, a greek yogurt, (sprinkled with stevia and cinnamon) and apple slices!

Dinner was one of my favorite way to eat veggies...Zucchini chips! (SO amazing!)

Along with the zucchini chips, we had some Honey-BBQ chicken!

I like to use frozen chicken breast, (why frozen you ask!? It stays good longer, which is vital when there are only two people... and is easy to de-thaw for a quick meal any time!) I buy the tenderloins because they cook really fast!
I simply add a bit of chicken stock, garlic, pepper, and a dash of stevia to the pan and turn the heat on high.

When the chicken is almost done cooking through, I add a few tbs of BBQ sauce and honey and let it brown on both sides, (as well as letting the rest of the liquid evaporate).

And PRESTO! The chicken is done in about 8-10 minutes! Here is the finished product! DELICIOUS!

After dinner, I was in the 'baking mood' so I made some 'lighter' peanut butter cookies...(Oh, and I should probably add that I didn't eat this whole stack in one sitting! :) I only ended up having a few bites, because I was full from dinner, but they tasted great!)

Apparently my husband wasn't too full though...Imagine that! ;)

CAUGHT! Zoey was waiting patiently for a crumb or two!

I finished off the day with my FAVORITE TEA...Vanilla Chai! I don't really like tea, but this stuff is amazing! I first tried it a few years ago, and haven't strayed since! It is like dessert with a little stevia and whip cream on top! ;)

I hope all the mom's out there felt loved and appreciated today! This world really does go round because of great moms! Hope everyone had a great week, and got to spend some time with some wonderful women today! xoxo
