Wow...What a busy week for me! In addition to working 5 days this week, I had an interview (got offered the job- Yay!), bought (for the first time ever) some veggies to grow in my own little garden, and even survivied a week without my computer! ( I don't recommend it-- it was in the shop. I had to use my hubby's I-Pad for the week-- Not ideal to say the least!)
In addition to all of that, (whew) I started to think up some ways that I could further teach people how to make lifestyle changes that would improve their health! After careful consideration, I thought of some realistic ways that I would be able to provide people with the support and guidance they need to get healthy, and/or lose/maintain a healthy weight... Just in time for the summer! :)

Now on to the Daily Dish...
For breakfast I had one of my new favorites... Frozen Hot Chocolate! I had it with an extra scoop of protein powder to make it a meal and topped it off with the always-wonderful PB Pows! :)

So creamy, rich, and refreshing in the morning!

For lunch, (after an awesome Body Pump workout), I made some Egg Burrito Wraps! I simply put some egg whites, ham, salsa, mozzarella cheese and tomatoes in a pan, and toasted the wraps in my oven while everything was cooking up in the pan! They were quick and sooo yummy!

These were the perfect balance of carbs/protein/fat after a tough workout!

I was in the 'baking/cooking' mood, so I whipped up some homemade Coldstone French-Toast Ice Cream! It is a lighter version (of course) of my hubby's favorite flavor at Coldstone! It is really easy and freezes really well!
I didn't actually have any of this today because it needs to freeze overnight, but I thought I would share the recipe/pictures for inspiration!

To make it I take a tub of light vanilla ice cream, tons of cinnnamon, some maple extract, and a few mini chocolate chips and put them together in my Kitchen Aid Mixer....Beat until just combined and place in a tupperware container and freeze! {That's the patience part!}
It really is that easy and can be done with any flavor of ice cream/toppings! Just be sure to use light ice cream, or it could turn out to be as many calories as a Coldstone Creation~ (aka not very healthy!) :)

I then took some time to just RELAX...It was a long week, and some much needed time with my Zoey was needed! Maybe I needed it a little more than her...Looks like I'm forcing some cuddles!!! :) Haha!

And then she decided to join me in the relaxation! :)
Mongolian BBQ was my dinner...Such a fun night with my husband and sister! :) My plate looks nasty...But it's SO good! I use tons of veggies, chicken, teriyaki, garlic and soy sauce!
We always get the lettuce wraps... A fun alternative to flour tortillas!
For dessert we went to a new frozen yogurt place! Yeah! :)
On mine, (I got strawberry frozen yogurt) I got pretzels, strawberries and waffle cone bits!

This was my sisters cup!
And....My husband got a cone with chocolate from Ben and Jerry's next door! Cutie! :)
And that was my day... full of the best things: A good workout, yummy/healthy food, family, and relaxation!!
